Ingredients
  

  • 8 large eggs
  • ½ cup cottage cheese for creaminess; sub dairy-free yogurt if needed
  • ¼ cup Greek yogurt optional but makes it extra fluffy
  • ½ cup shredded cheddar or mozzarella cheese
  • ½ cup cooked bacon or sausage crumbles or use veggie sausage
  • ½ cup chopped spinach or bell peppers optional for veggie version
  • Salt & pepper to taste
  • 1 tsp garlic powder
  • 1 tsp olive oil or butter to grease muffin tin

Instructions
 

  • Preheat and Prepare:
    Preheat oven to 350°F (175°C). Grease your muffin tin with olive oil or butter.
  • Blend the Base:
    In a large bowl, whisk together eggs, cottage cheese, and Greek yogurt until smooth. This combo keeps the texture creamy and high in protein.
  • Add the Flavor:
    Fold in shredded cheese, bacon (or sausage), spinach, and your favorite seasonings. Mix gently so every bite gets flavor.
  • Pour and Bake:
    Divide the mixture evenly among the muffin cups. Bake 18–20 minutes or until the tops are set and slightly golden.
